LOW CARB CHICKEN WRAP RECIPE (Totoro Design)

Hi! It's been quite some time since I've posted a cooking recipe, and thus I'm excited to share this Low Carb Chicken Wrap Recipe, decorated like Totoro.
It's really easy to prepare this recipe, and it's a low-carb alternative to eating tortilla/burrito wraps. I made it some time back for my husband, and he enjoyed it as much as I did (though he really doesn't care what his food looks like, and thus didn't comment on the Totoro design 😂)
I filled the wrap with stir fried sweet & sour chicken, but you can always replace it with another filling of your choice. Skip the meat and replace with tofu for a vegetarian version!

LOW CARB CHICKEN WRAP RECIPE

2 x Totoro Wraps (cut in half)
Ingredients
4 Eggs
Pinch of Salt and Pepper
1 tsp of Butter
50g of Stir Fried Chicken
(Cooked according to your preference)
3 Sheets of Japanese Seaweed (Nori)
2 Handfuls of Salad Greens (Washed and Dried)
[For Totoro Design]
1 Slice of Sliced Cheese
1.5 tbsp of Japanese Mayonnaise
1 Sheet of Japanese Seaweed (Nori)
2 Tiny Salad Leaves
Directions
1. Beat the eggs, salt and pepper in a bowl.
2. Heat butter in a saucepan until hot, and tilt to coat the pan with butter. (I used a rectangular one that is typically used to prepare tamagoyaki)
3. Pour in the beaten egg mixture. Gently push the cooked portions from edges toward the center with spatula. When top surface of eggs is thickened and no visible liquid egg remains, flip the omelette over. Cook for awhile and set it aside on a plate.
4. Prepare the wrap. Lay a piece of seaweed on a board. Place the omelette on top, and add the salad greens and stir fried chicken.
5. Start rolling the wrap from one end, and use a second sheet of Nori to cover the wrap entirely. Cut a third sheet of Nori in half, and use them to cover the ends of the wrap.
6. Wrap 5 with cling wrap and set it aside for 10 minutes.
7. Meanwhile, prepare the decor for each Totoro wrap.
- For Eyes: Cut out 2 circles of cheese, and 2 smaller circles of Nori for the eyeballs
- For Nose: Cut a small oval of cheese
- For Whiskers: Cut out 4 long, rectangular pieces of cheese
- For Ears: Cut 2 triangular pieces
- For Belly: Cut 5 triangular-outlines for the details on Totoro's belly
8. Slice the wrap in half and gently remove the cling wrap. Follow the video to decorate it. like Totoro. Place a tiny salad leaf on Totoro's head for the finishing touches!
9. Enjoy!
