Lemon Citron Macaron Filling Recipe

Hi! I'm excited to share Laduree's citron macaron recipe with you! I've blogged about citron macarons before when I baked minion macarons and toy story alien macarons. I cannot get over how zesty and refreshing these macarons taste. The lemon filling recipe is from the Ladurée Sucre recipe book. 

LEMON CITRON MACARON FILLING RECIPE

Ingredients:
160 g granulated sugar
2 tsp (5g) zest of lemon
2 tsp (5g) cornstarch/cornflour
3 eggs
110 ml lemon juice
235 g butter, softened

Directions:
1. In a bowl, mix together the sugar and lemon zest. Add the cornstarch, the eggs one at a time, and the lemon juice.
2. Pour this mixture into a saucepan and cook over low heat, stirring with a spatula until it simmers, allowing the cream to thicken.
3. Remove from heat.
4. Allow the cream to cool slightly for approximately 10 minutes, so that it stays scalding (60 degrees Celsius)
5. Add the softened butter.
6. In a blender or food processor, blend the butter and cream together to obtain a homogenous mixture.
7. Keep in an airtight container in the refrigerator for a minimum of 12 hours to allow the cream to become firm.

  1. I loved the taste of this lemon curd, one of the brightest I've ever made, only problem is I find that it's too watery? I don't know how to make it thicker. They tend to leak out of the macarons!
