One of a must-visit place when you go to Melbourne is the Brighton Bathing Boxes. The brightly coloured wooden huts line the foreshow of Brighton Beach, each painted with its own distinctive character and style. Naturally, I was super excited to visit this iconic beach on my recent trip to Australia with my hubby. 

We visited Brighton Beach in the late afternoon to catch the sunset. The setting sun cast a vibrant, orange tint on everything. It was simply stunning. As our accommodation is located near to Brighton, we decided to visit the place during sunrise, when it would be quieter and less crowded. I loved seeing the sky turn from dusty pink to blue.

Did you know that they were originally built to preserve morality and dignity of swimmers? This is because it was from over a century ago, during a time when bikinis and tight swimwear still weren't an accepted form of clothing.

Today, they have become an icon of Australia. In fact, if you want to own one of these wooden huts for yourself, the price could go all the way up to AUD$337,000! Not cheap to own a piece of Brighton's icon. 

Getting to the Brighton Bathing Boxes
• If you’re travelling by train, you can hop on the Sandringham line from the central Flinders Street Station. The journey takes around 20 minutes, and you alight at the Brighton Beach Railway Station. From there, it is just a 500m walk through pretty scenery to the bathing boxes.
• If you’re travelling by car, you can park close to the beach. The drive is around 20 minutes from the centre of Melbourne.
• For those travelling by bus, you’ll need to catch the 216 or the 219 bus from Melbourne’s Central Business District.

BRIGHTON BATHING BOXES MACARON RECIPE

Approximately 5 Large Macarons

Ingredients
[For Macaron Shells]
Meringue: 70g of Egg whites + 90g of Castor sugar
80g of Almond flour
80g of Powdered/icing sugar
Food colouring to get the batter colours in Step 4

[For Filling]

Directions
[For Macaron Shells]
1. Make the meringue. In a bowl, beat the egg whites on low speed using an electric mixer until it is white and frothy (approximately 1 minute). Gradually add the sugar 1/4 at a time. When the first addition of sugar has completely dissolved (approximately 1 minute later), increase the mixer speed to medium and add until all the sugar has been incorporated. Continue to beat until stiff peaks form. [Basic Macaron Tutorial Video]
2. Sift the almond flour and icing sugar to the meringue.
3. Begin macaronage. Using a spatula, start the macaronage process by folding and lightly scraping the top of the batter. Continue till the ingredients just start to combine.
4. Then, split the batter and continue to macaronage process, until you get a molten-like mixture and drips down like a ribbon when lifted. Transfer to piping bags.

5. Pipe out batter onto parchment paper. Please refer to video above for demonstration.
6. Let the shells dry in a non humid place or in an air conditioned room. You should be able to touch it gently with the tip of your finger without it sticking.
7. Bake in a preheated oven at 150°C for approximately 20 to 25 minutes.
8. Let shells cool before piping with filling. Enjoy!
