Baking Therapy: A treat for our inner child, dedicated to the young at hearts who have held continuous faith, remained un-jaded, and never ceased to dream. 

I believe there's a child in all of us, some more present than others, but most are hidden away and suppressed by the pressures from life. It's time to awaken your inner-child with these cookies, and remember how it's like to be free-spirited again, seemingly undaunted by anything, and curious about everything.

Who says cookies are only for kids?

These chewy matcha cookies are a treat for both adults and children alike. Its chewy, buttery, melt-in-your-mouth goodness brings back fond childhood memories of grandma/mummy's freshly made butter cookies; The matcha flavor tones down the level of sweetness to suit an adult's palette. 

They can be enjoyed with fresh milk, coffee, or tea, and even on its own!


CHEWY MATCHA GREEN TEA COOKIES

Number of servings: 25 cookies

Ingredients
100g of Unsalted butter *room temperature
50g of Brown sugar
1 Egg at room temperature Vanilla extract 160g of All purpose flour
2 tbsp. of Matcha green tea powder
1/2 tsp. of Baking powder
40g of white chocolate chips
40g of milk chocolate chips

Directions
1. Cream the butter in a large bowl. Add sugar and mix until white and fluffy.
2. Add the beaten egg little by little, and mix well. Add a few drops of vanilla extract and mix well.
3. Sift in flour, Matcha powder, and baking powder, then mix well with a spatula.
4. Wrap in plastic wrap and cool in the fridge for about 30 minutes to set.
6. Divide the dough into 25 pieces. Make it flat and press the chocolates chips into the dough. Roll the dough into a small ball and press it out into a disc shape. 7. Bake in a preheated oven at 170C for 10 minutes. 8. Cool the cookies on the baking sheet or a wire rack before serving.

As we grow older to become more knowledgeable and understanding, our inner child might have become more tamed. Be glad at how far we've grown, but never stop believing in the best of people, be curious, let your imagination run wild, don't be afraid of making mistakes and dream big.
