Low Carb Lasagna (No noodles!)

I've been going through a period of intense cravings for lasagna. As the man and I are trying to be healthier, I decided to make a low carb alternative of an Italian Lasagna by replacing the lasagna pasta sheets with omelettes. 

This low carb lasagna is a warm, cheesy and hearty dish for lazy, rainy days. Hence, it is decorated like Gudetama, the lazy egg character from Sanrio, blissfully tucked in a toasty bed of lasagna.

In the past, I tried making lasagna with zucchini instead of pasta, but didn't like the sogginess of the vegetable (maybe I messed up the recipe?). This no-noodle lasagna using omelettes has a way nicer texture and satisfied any cravings I had.

The filling is prepared with minced beef, stir fried mushrooms, and sliced onions. Each layer is blanketed with mozzarella (stretchy, melted goodness... yum). You can choose to mix with other kinds of cheese like cheddar, parmesan or cottage cheese.

LOW CARB LASAGNA RECIPE

Oven-safe baking dish
Serves 4

Ingredients
Small cube of butter
8 eggs

Small cube of butter
Half an onion
200g Brown mushrooms
200g Shimeji mushrooms
Pinch of salt and black pepper

250g of Minced beef (or pork/chicken)
Pinch of salt and black pepper

350g of Prego Roasted Garlic Parmesan Sauce

250g of Shredded Mozzarella cheese

Optional for decoration*
Nori (dried seaweed)
Lettuce and cherry tomatoes for garnish

Directions
1. Prepare omelettes. This will replace the lasagna sheets. In a bowl, beat the eggs. Add salt and pepper if desired. On medium fire, heat up a large non-stick frying pan and melt the butter to coat the surface. Pour eggs, and use the frying pan to slowly peel the edges of the omelette. When firm enough, gently flip it over. You should have 6 sheets of omelette. Set them aside.
2. Prepare stir-fried onions and mushrooms. Wash and slice the mushrooms. Slice the onion lengthwise and in halves. On medium fire, heat up a large non-stick frying pan and melt the butter to coat the surface. Stir fry the onions until they become translucent. Add the mushrooms. Season with salt & pepper. Continue stir frying till most of the water from mushrooms have evaporated. Set aside.
3. In the same pan from Step 2, stir fry the minced beef on medium heat, breaking it up with a spatula. Season with salt & pepper. Cook until the meat is just done. Then, add the Prego Roasted Garlic Parmesan Sauce, mushrooms and onions (from Step 2) to Step 3.
4. Assemble. While the oven is getting preheated to 180°C, line the baking dish with a layer of omelettes (leave 1 omelette for decoration). Then, layer with the minced beef mixture. Cover with mozzarella. Repeat the process. Cover the final layer with a generous amount of cheese. Bake for about 20 - 25 minutes, or until the cheese becomes golden brown.
5. To decorate like Gudetama, slice the remaining omelette into a semi circle for his head, and small ovals for the hands. Cut dried nori (seaweed) for the mouth and eyes. Garnish with lettuce and cherry tomatoes.
