No-Flour Nutella Banana Pancake Recipe

Are you up for some guilt-free pancakes?

You read that right, GUILT-FREE; NO FLOUR is used in this recipe. Only 5 simple ingredients are required (which you probably can find in your kitchen). This is a low-calorie alternative to normal pancakes and is great for days when you want to indulge, but without the guilt. I'd always be up for these pancakes if served as a breakfast-in-bed.

The secret behind this recipe? Bananas. This tropical fruit is the alternative to flour. While bananas are rich in carbohydrates, the fresh fruit still beats processed white flour that lacks nutrition. Yet even without flour, these pancakes are still fluffy and delicious. 

In fact, to make this recipe even more guilt-free, you can skip the Nutella and save some calories. They will still taste good. However, as a chocolate-lover, I'd definitely go for the Nutella. After all, a little bit of chocolate wouldn't hurt, right? *lying to myself*

You can garnish the pancakes with your favourite fruits and toppings. I went for the classic maple syrup and my favourite strawberries. Just treat this as an ordinary pancake and match with whatever you like.  


NO-FLOUR NUTELLA BANANA PANCAKE RECIPE
Servings: 3 - 4 pancakes
Time: 20 minutes

Ingredients
2 Ripened bananas
2 Eggs
1 tsp of Baking Powder
1 tbsp of Unsalted butter (softened)
1 tbsp of Nutella
Fruits and maple syrup for garnishing

Directions
1. In a bowl, beat the eggs and add the baking powder.
2. Slice up some bananas and mash them up in a separate bowl. For a fluffy pancake, leave some chunks when mashing the bananas.
3. Gradually add the beaten egg mixture to the bananas, mixing it continuously. We now have our pancake batter. Set it aside for use later.
4. Meanwhile, mix Nutella when softened unsalted butter and transfer the mixture to a piping bag. We will use this to make chocolate swirls in our pancakes.
5. Heat up a greased non-stick pan over high heat. Lower the heat and place an egg-mould on the pan. Pour the batter in.
6. Squeeze in a spiral of Nutella mix above the pancake. Let it sit for a few minutes before flipping them over. You can test if it is ready to be flipped by gently sliding your spatula beneath the pancake. When it does not stick and retains its shape, they are ready to be flipped.
7. Stack the pancakes and serve with your favorite syrup and other garnishes!
