Fluffy Gateau au Chocolat

This Fluffy Gateau au Chocolat is chocolatey, moist, soft, and melts in your mouth. Tastes great when it's served warm with ice cream and raspberries for some tartness. It has easily made its way to one of my top favourite chocolate cake recipes. I just love how the light texture packs a surprising punch of dark chocolate-y flavour.

This chocolate cake recipe was really quick and easy to make as it was mostly just mixing and placing it in the oven! The good thing about cakes like these is that they don't have to look perfect, so it's very simple to decorate and serve.  Also, it's hard to go wrong with chocolate ;)

I've also gone for a healthier alternative with ingredients by using dark chocolate instead of milk chocolate, and skipping the butter! A great treat for those who want to indulge without feeling too guilty.

With some time to spare, I went the extra mile to decorate my chocolate cake! Used royal icing to draw the bear's face. For its ears, mould the cake crumbs into a ball and press them against the sides of the cake.

FLUFFY GATEAU AU CHOCOLAT RECIPE

Ingredients
2 Eggs (room temperature)
70g of Caster sugar

[Flavour Oil]
80g of dark chocolate chips (~70% cocoa)
20g of Milk
50g of Vegetable Oil
20g of Plain unsweetened yoghurt

A
{30g of Cake flour
10g of Cocoa powder
10g of Almond flour/powder
1/2 teaspoon of baking powder}

Bunch of Raspberries
Powder sugar for dusting


Directions
1. Preheat oven to 170°C
2. Prepare the flavoured oil. Melt the dark chocolate chips, either in a microwave in 20 second bursts or over a water bath. Mix the milk, followed by vegetable oil and yoghurt. Whisk well.
3. In a separate bowl, beat the eggs and sugar on high speed till white and fluffy (about 5 minutes). Switch to low speed and beat on low speed for 1 minute.
4. Add the mixture from Step 2 to Step 3. Mix well.
5. Sift in the dry ingredients in A. Fold it in gently, scooping batter from the bottom and lifting to the top.
6. Pour the batter into a baking pan lined with parchment paper. Bake in the oven at 170C. After putting it in the oven for 10 minutes, take it out from the oven and use a knife to slice across the surface. Put it back in for 30 - 35 minutes.
7. Remove from oven and let it cool slightly. Dust with powdered sugar and top with raspberries.
